BBQ's are a distinctly summertime experience, and chef Michael Motamedi has some pizza recipes you can use on the grill.

 

Pizza dough ingredients:

  • 500 ml water,
  • 1kg flour, 20g salt,
  • 2g yeast.

Instructions:

  1. Mix everything together.
  2. Portion, cover and let rest overnight in the fridge.

Ingredients for a spicy tomato sauce:

  • 1 large onion,
  • 1 head of garlic,
  • 2 whole Italian chilis,
  • 3L canned tomato.

Instructions:

  1. Cook onions, add garlic and chili and cook further, add tomato and simmer for 1 hour.
  2. Season to taste and blend everything.

Ingredients for garlic olive oil:

  • 1 head of garlic,
  • 1L olive oil.

Instructions:

  1. Cook garlic to a golden brown color with a quarter of the olive oil on medium low heat until tender to the touch.
  2. Turn off heat and add remainder of oil.
  3. Allow to cool completely before blending.

Toppings: Anything and everything you like.

I will be using stachatella cheese, basil, and fresh chilli for one.

And Arugula, prosciutto, parmesan cheese for another.

Tomato sauce and stracciatella

  1. Sprinkle the pizza dough with flour, place it on a floured surface, make a small crust. Turn over and stretch out to the size you like.
  2. Place the stretched out dough on a HOT BBQ. Once it starts to bubble, turn it over. Almost a minute on each side.
  3. Take off grill, spread the tomato sauce evenly on the cooked pizza dough
  4. Dollop stracciatella cheese on top of the sauce
  5. Place basil leaves evenly around pizza
  6. Sprinkle the fresh chilli slices over the entire pizza
  7. Salt and oil the pizza (specifically the cheese)
  8. Slice the pizza and serve

Arugula and prosciutto

  1. Sprinkle the pizza dough with flour, place it on a floured surface, make a small crust. Turn over and stretch out to the size you like.
  2. Place the stretched out dough on a HOT BBQ. Once it starts to bubble, turn it over. Almost a minute on each side.
  3. Take cooked dough off the grill, brush the olive oil on top of the cooked pizza dough
  4. Spread arugula evenly on top
  5. Place prosciutto on top
  6. Finish with slices of fresh parmesan
  7. Slice the pizza and serve

Classic topping

  1. Sprinkle the pizza dough with flour, place it on a floured surface, make a small crust. Turn over and stretch out to the size you like.
  2. Place the stretched out dough on a HOT BBQ. Once it starts to bubble, turn it over. Almost a minute on each side.
  3. Take off grill, spread the tomato sauce evenly on the cooked pizza dough
  4. Spread grated mozzarella cheese on top of sauce
  5. Place desired toppings (example: pepperoni, mushrooms, green peppers ect...)
  6. Sprinkle some more cheese on top
  7. Place back in BBQ on top rack, close door
  8. Once cheese is melted take off, slice and serve
