Celebrity Chef Roger Mooking grills rare beef quesadillas and performs from his new old-school hip hop album, Feedback.

Ingredients

  • 1 lb of Flank Steak
  • 1 Tsp Vegetable Oil
  • Kosher Salt to taste
  • Ground Black Pepper to taste
  • 4 x 8" Spelt Tortilla or Tortilla of choice
  • 4 C grated Smoked Cheddar
  • 1 C thinly sliced Red Onion
  • 4 Tsp fresh Thyme
  • 1 C Baby Arugula
  • 4 Tsp Extra Virgin Olive Oil
  • Maldon Sea Salt for garnish

 
Preheat a grill to medium high heat.
 
Pat steak dry with a paper towel on both sides. Rub with vegetable oil and season well with salt and pepper. Cook over direct heat on bbq until seared on one side then flip and repea, total cooking time is approximately 4 minutes. Allow steak to rest for 2 minutes.

While steak is cooking place tortillas over indirect heat then add equal amounts of cheese in an even layer on top of tortilla followed by thyme, red onion, salt and pepper to taste. Cook slowly until a crust forms on the bottom and the cheese melts. Transfer to a service plate.
 
Slice rested steak diagonally into very thin slices.  Place on top of melted cheese as pictured followed by baby arugula. Drizzle with olive oil and large crystal Maldon Sea Salt. Serve hot with knives and forks.  
 
If your grill is not large enough to do all tortillas at once you can cook them individually as well.  Simply repeat the same process.
