If you're looking to try something different with scallops, take a look at this recipe using fresh fall apples.

Ingredients:

  • ½ cup Juice of Honey Crisp Apples
  • Tsp. chopped lemon grass
  • ½ cup cider
  • ½ cup rice wine vinegar
  • ¼ cup sugar
  • Juice from half a lime
  • Pinch of dried chillies
  • Shaved raw apple and radish
  • Black pepper and sea salt to season
  • Garden herbs and flowers to garnish (dill, chive, basil, marigold, nasturtium)

Instructions:

  1. Make sure to purchase fresh scallops. This is also a fantastic sauce for shucked oysters.
  2. Rinse the scallops and pat dry. Slice the scallop into thin coins and leave in the refrigerator until ready to serve.
  3. Combine juice from Honey Crisp apples, cider, vinegar, lemon grass and sugar in a pot and bring to a boil.
  4. Remove from heat and chill, add lime juice and chillies.
  5. When ready to serve, dress the scallops in the dressing, season with black pepper and sea salt.
  6. Garnish the dish with shaved fresh radish and apple.
  7. Cover with herbs and flowers as an added garnish.
