If you're looking to try something different with scallops, take a look at this recipe using fresh fall apples.
Ingredients:
- ½ cup Juice of Honey Crisp Apples
- Tsp. chopped lemon grass
- ½ cup cider
- ½ cup rice wine vinegar
- ¼ cup sugar
- Juice from half a lime
- Pinch of dried chillies
- Shaved raw apple and radish
- Black pepper and sea salt to season
- Garden herbs and flowers to garnish (dill, chive, basil, marigold, nasturtium)
Instructions:
- Make sure to purchase fresh scallops. This is also a fantastic sauce for shucked oysters.
- Rinse the scallops and pat dry. Slice the scallop into thin coins and leave in the refrigerator until ready to serve.
- Combine juice from Honey Crisp apples, cider, vinegar, lemon grass and sugar in a pot and bring to a boil.
- Remove from heat and chill, add lime juice and chillies.
- When ready to serve, dress the scallops in the dressing, season with black pepper and sea salt.
- Garnish the dish with shaved fresh radish and apple.
- Cover with herbs and flowers as an added garnish.
