With the rise of nut butters, there are more healthy snacks than ever that you can make with them.


Peanut butter energy balls

Ingredients:

  • 1 cup unsalted peanuts
  • 1 cup dates, chopped
  • 1/2 cup dried cranberries
  • ¼ cup natural peanut butter
  • 2 tsp ground chia seeds

Instructions:

  1. Add ingredients to a food processor, and pulse until the mixture is evenly combined.
  2. Roll into 20 balls. Place on a baking sheet lined with parchment paper and freeze for an hour.
  3. Transfer to a freezer bag or container. Store in the freezer or fridge.

 

No fail green smoothie

Ingredients:

  • 2 cups unsweetened coconut water
  • 1 cup spinach
  • 5 prunes or dates
  • 1 banana
  • 1/2 avocado
  • 2 tbsp nut butter (e.g. peanut or almond butter)
  • 1/2 cup ice cubes

Ingredients:

  1. Place all ingredients into blender.
  2. Whirl.
  3. Enjoy.

 

Apple "cookie" slices

Ingredients:

  • 1 apple, cored and sliced into circles
  • 2 tbsp sunflower seed butter (or pumpkin seed butter or other nut butter)
  • 1 tbsp shredded unsweetened coconut
  • 1 tbsp mini chocolate chips
  • 1 tsp wheat germ or ground flax seed

Instructions:

  1. Spread sunflower seed butter on apple slices.
  2. Sprinkle on coconut, wheat germ and a few chocolate chips.
