With the rise of nut butters, there are more healthy snacks than ever that you can make with them.
Peanut butter energy balls
Ingredients:
- 1 cup unsalted peanuts
- 1 cup dates, chopped
- 1/2 cup dried cranberries
- ¼ cup natural peanut butter
- 2 tsp ground chia seeds
Instructions:
- Add ingredients to a food processor, and pulse until the mixture is evenly combined.
- Roll into 20 balls. Place on a baking sheet lined with parchment paper and freeze for an hour.
- Transfer to a freezer bag or container. Store in the freezer or fridge.
No fail green smoothie
Ingredients:
- 2 cups unsweetened coconut water
- 1 cup spinach
- 5 prunes or dates
- 1 banana
- 1/2 avocado
- 2 tbsp nut butter (e.g. peanut or almond butter)
- 1/2 cup ice cubes
Ingredients:
- Place all ingredients into blender.
- Whirl.
- Enjoy.
Apple "cookie" slices
Ingredients:
- 1 apple, cored and sliced into circles
- 2 tbsp sunflower seed butter (or pumpkin seed butter or other nut butter)
- 1 tbsp shredded unsweetened coconut
- 1 tbsp mini chocolate chips
- 1 tsp wheat germ or ground flax seed
Instructions:
- Spread sunflower seed butter on apple slices.
- Sprinkle on coconut, wheat germ and a few chocolate chips.
