Giving a southern tradition a northern twist, chef Adrian Forte cooks up the latest Canadian obsession: northern fried chicken and waffles.

- 1LB. split wings
- salt
- pepper
- sauce - sriracha maple
- 1/2 cup sriracha
- 1/2 cup maple syrup
waffles
- 2 eggs
- 1 3/4 cup buttermilk
- 2 cups all-purpose flour
- 1 tbsp brown sugar
- 1/2 cup melted butter
- 4 tsp baking powder
- ½ tsp vanilla extract
method
- In a saucepan set on low to medium heat add ½ cup of pure maple syrup.
- Add ½ cup of sriracha and whisk continuously until combined, leave on low heat.
- In a large steel bowl, combine split wings with salt and pepper, mix until wings are coated and seasoned evenly.
- Beat eggs in a large mixing bowl with buttermilk and vanilla; add flour, baking powder, brown sugar, then the
- melted butter, mix thoroughly until batter is smooth and lump free.
- Fry wings in deep fryer set to 350° for 10 minutes. remove from oil and let oil drain.
- Pour waffle batter into pre-heated waffle iron until the batter covers all areas on the bottom plate, but not over flowing.
- Cooked wings should be reach a minimum internal temp of 74°C (165°F).
- Add cooked wings to mixing bowl, top with 2oz of sriracha maple sauce, toss until coated evenly.
- Remove waffle from iron, drizzle 1oz of pure maple syrup over the cooked waffle.
- Add sriracha maple sauces wings on top of waffle, stacked in the middle.
- Drizzle remaining sriracha maple from mixing bowl over top of wings and waffles.
- Finish by topping wings with a few pinches fine diced chives.
