Fresh is generally best but you might not always have the time.  Here are some great ideas for make-a-head sandwiches that will give you one less thing to think about during the morning rush.

HAM & CHEESE

  • Best construction? Ham on one side, grated block cheese on the other, mustard in the middle. Grated block cheese is the best here because it freezes well and tastes just fine once it thaws. Frozen grated cheese is great for all melty situations! Nachos?!?
  • Tip: Suck out excess air from the freezer sandwich bag using a straw! Key to freezing sandwiches well is ensuring frost doesn't form on the bread.

PEANUT BUTTER AND JAM

  • Best construction? You can easily replace the peanut butter with any nut butter. Spread peanut butter on both slices of bread. Add dollop of jam into the middle and smoosh (gently). Don't put jam directly on bread because it will thaw soggy.
  • Tip: Make your own version by removing crusts and sealing the edge of the sandwich. Use the side of your cutting board, or a fork, to do this. Works great!

CHICKEN SALAD

  • Best construction? Use chicken from store bought rotisserie chicken and/or grill chicken breasts. Put all ingredients into a big mixing bowl. Mayonnaise doesn't freeze well so be sure to use something like Miracle Whip instead. Add cranberries, cilantro and spices!
  • Tip: Blend everything with a hand mixer. Chicken will shred automatically so you can save time.

TASTE TEST

  • Take a taste of some freeze ahead sandwiches that are now thawed compared to a fresh made one.
