Coming up with healthy meal ideas can be hard at the best of times, let alone by using frozen produce. But these ideas will help you save money and stay healthy.


Shakshuka with artichoke hearts

Ingredients:

  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • ½ teaspoon chili flakes
  • 1 teaspoon dried oregano
  • 1 can whole tomatoes (28 ounces)
  • 4 eggs
  • 4 frozen artichoke hearts, quartered
  • ½ cup feta cheese
  • ¼ cup chopped flat leaf parsley

Instructions:

1. Place a medium skillet over medium heat. Add olive oil, garlic and onion and cook for 5 minutes until onion is soft and translucent. Add chili flakes and oregano and cook for an additional 30 seconds.

2. Add tomatoes to the pan, use the back of a spoon to break up the tomatoes and cook for 15 minutes uncovered.

3. Create 4 wells in the tomatoes and crack an egg into each well. Season eggs with salt and pepper. Cover with a lid and turn heat down to low cooking for 10 minutes. Add quartered artichokes and cook for another 10 minutes until egg whites are firm and yolks are still soft.

4. Serve 2 eggs with tomato sauce and artichokes over a piece of crusty bread.

Butternut Squash & Goat Cheese Spread

Ingredients:

  • 2 ½ cups frozen butternut squash thawed
  • 1 log soft unripened goat cheese (140 grams)
  • ½ cup full fat sour cream
  • ½ teaspoon turmeric
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1/8 teaspoon nutmeg

Garnish

  • 2 tablespoons roughly chopped basil
  • 2 tablespoon sundried tomatoes packed in oil
  • 2 tablespoons toasted pepitas to garnish

Instructions:

1. Place thawed squash in a clean tea towel and squeeze out excess water.

2. Place all ingredients in food processor. Blend until smooth. Scoop butternut squash spread into a serving dish and top with basil, sundried tomatoes and pepitas.
