Ingredients:

  • 5 cups of Seedless Watermelon, which works out to be about 1/2 of a large watermelon
  • 3/4 cup freshly squeezed Lime Juice
  • 1/2 cup Sugar
  • 4 Limes
  • 1/2 cup Grey Goose Vodka optional
  • Coarse Salt for garnish

Tools:

  • 12x disposable cups 88ml/3oz, plastic or paper
  • Wooden Craft Spoons

Recipe:

  • Place all ingredients in a blender and blend until smooth and sugar is dissolved
  • Pour ingredients through a mesh sieve to remove watermelon pulp
  • Prepare limes by cutting off ends, and slicing 3 thick slices from the middle section of each lime. These will be placed on top of the popsicle mixture and should be the same size as the top of the disposable cup
  • Insert craft spoons through centre, set aside
  • Divide popsicle mixture between disposable cups
  • Top with lime and craft spoon, with the round side of spoon facing up
  • Freeze overnight
  • When ready to serve, sprinkle salt for garnish
  • Pull popsicles out of cup, careful to not separate the lime and spoon from the popsicle. Warm up the outside of the cup with cold running water if popsicle does not slide out easily
  • Serve on a tray lined with shaved ice and garnished with lime slices or other fruit
