Ingredients

  • 3 2/3 cups chopped peaches (if not adding Amaretto make this 4 cups peaches)
  • 1/4 cup lemon juice
  • 7 1/2 cups granulated sugar
  • 2 pouches Liquid Pectin
  • 1/3 cup Amaretto Liqueur

Method

  1. Place 8 washed 250 ml canning jars in canner and bring to a boil over high heat for at least 10 minutes to sterilize jars. When ready to fill jars with prepared jam place the snap lids in hot (not boiling) water for 5 minutes to sanitize and soften sealing compound.
  2. Peel , pit and chop peaches
  3. In large saucepan stir together chopped peaches, sugar and lemon juice.
  4. Bring to a boil over high heat.
  5. Boil hard 1 minute stirring constantly
  6. Remove from heat and stir in Liquid Pectin
  7. Stir in Amaretto if using
  8. Stir and skim for 5 minutes to prevent fruit from floating and getting rid of foam if any
  9. Pour into warm sterilized jars to 1/4 inch from the rim
  10. Cover with hot lids and screw rings on tightly
  11. Place in boiling water canner for 5-10 minutes to process
  12. Remove from canner carefully trying not to tip jats and let sit for 24 hours

And voila! You have made Amaretto Peach Jam! Feel free to experiment! Use your imagination for ingredients! Just be sure to follow the instructions on the type of pectin you use!
