If the way to your dad’s heart is through his stomach then you’ll want to make him something special this Father’s Day. From a BLT waffle sandwich to cornbread waffles with jerk pulled pork & slaw we’ve got the makings of a great breakfast or brunch menu.
 

Cornbread Waffles with Jerk Pulled Pork & Slaw

Cornbread Waffles

  • 1 3/4 cups all- purpose flour
  • 1 1/4 cups yellow cornmeal
  • 1 Tbsp. baking powder
  • 1 tsp. Sugar
  • 1 tsp. salt
  • 2 cups buttermilk
  • 3 Tbsp. vegetable oil
     
  1. In a large bowl combine flour, cornmeal, baking powder, sugar and salt. Mix in buttermilk and vegetable oil.
  2. Place 1/2 - 3/4 cup in heated waffle maker and cook until golden brown.
     

Slow Cooker - Pulled Pork

  • 1- 5 lb. boneless pork shoulder
  • 1 medium yellow onion, sliced
  • 4 medium cloves of garlic, whole
  • 1 Tbsp. dark brown sugar
  • 1 Tbsp. salt
  • 1 Tbsp. jerk seasoning
  • 1 cup. chicken or beef stock
  • 1 cup. plain BBQ sauce
  • 1/2 cup jerk marinade
     
  1. Place onion and garlic cloves in the bottom of a slow cooker
  2. Combine sugar, salt and jerk seasoning in a small bowl.
  3. Rub the seasoning all over the pork and place on top of the onions and garlic. Pour chicken stock over pork.
  4. Place lid on slow cooker and cook on low for 6-8 hours
  5. Remove pork from slow cooker and use two forks to shred the pork.
  6. Pour BBQ sauce and jerk marinade into slow cooker and stir pork back in to heat.
  7. Place waffle on plate, top with jerk pork and garnish with green onions.
  8. Serve with Coleslaw
  • Quick Fix: Buy a box or bag of cornbread mix (most stores or bulk stores carry this item) Mix according to package directions and cook batter in waffle maker.
  • Purchase pre-cooked pulled pork from the deli-section of the grocery store. Heat according to package directions and mix in 1 cup of jerk marinade.
     

Chocolate Waffles with Strawberries and Whipped Cream

  • 1 1/2 cups all-purpose flour
  • 2 cups buttermilk to the ingredient list
  • 1/2 cup cocoa powder
  • 3 Tbsp. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 sp. baking soda
  • 3 eggs beaten
  • 2 Tbsp. butter melted
     
  1. In a large bowl combine flour, cocoa powder, sugar, baking powder, salt and baking soda.
  2. In a second bowl whisk eggs, butter and buttermilk together.
  3. Stir wet ingredients into the dry and stir to combine.
  4. Heat waffle iron and place recommended amount of batter into waffle iron and cook until done.
  5. Top waffles with whipped cream and fresh strawberries.
     
  • Quick Tip: Be sure to spray your waffle iron with vegetable oil spray
  • Quick fix: Substitute waffle recipe for a box of devil cake. Use about 1/2 a cup less of liquid than package cake directions call for. Cook in waffle iron.
     

Potato Hash Brown Waffles with Smoked Salmon

  • 3 large Yukon gold potatoes grated
  • 1 egg
  • ¼ cup all-purpose flour
  • 1 tsp. salt
  • ½ tsp. fresh ground pepper
     
  1. Place grated potatoes in a clean tea towel. Squeeze out excess water.
  2. Place potatoes in bowl, stir in egg, flour, salt and pepper.
  3. Heat waffle iron, place ½ - ¾ cup hash brown mixture in waffle iron and cook until crispy.
  4. Top with smoked salmon, sour cream and chives.
  5. Quick Fix: Buy pre-shredded potatoes in the deli section of your grocery store. Continue with the recipe as is.
     

Beer & Candied Bacon Waffle Stacks

  • 1 cup of all-purpose flour
  • 1 Tbsp. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup real bacon bits
  • 1/2 cup of dark beer
  • 1/2 cup water
  • 2 eggs
  • 4 Tbsp. of butter melted
     
  1. Combine flour, sugar, baking powder, salt and bacon bits.
  2. In a second bowl whisk together beer, water, eggs and butter
  3. Stir the wet ingredients into dry ingredients.
  4. Place 1/2 - 3/4 cup of waffle batter in waffle iron and cook through.

Candied Bacon

  • 8 strips of bacon
  • 2 Tbsp. of brown sugar
     
  1. Preheat oven to 325 degrees
  2. Place bacon in medium bowl and toss with brown sugar
  3. Line cookie sheet with parchment and lay bacon flat, top with a second piece of parchment and then another cookie sheet.
  4. Place bacon in the oven and cook for 20-30 minutes. Check the bacon after 20 minutes and if it isn’t crispy return to the oven until bacon is crisp.

Beer Glaze

  • 1 cup icing sugar
  • 1-2 Tbsp. dark beer
  1. Combine icing sugar and 1 tbsp. of beer in a bowl and mix until you reach desired consistency.
  2. Add more beer if glaze is to thick.
     

To assemble

  • Cut waffles diagonally into 4 equal pieces
  • Using 3 pieces of waffle, alternatively stack a piece of waffle with a piece of candied bacon. Use a toothpick to secure the stack and drizzle with beer glaze.
