Turkey Veggie Chili

Ingredients

  • 4 Tbsp. (50 mL) margarine
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 lb. (500 g) extra lean ground turkey
  • 1 can (439 mL.) (1 ) red kidney beans, rinsed and drained
  • 1 can (411 g.) (1 ) diced tomatoes, undrained
  • 1 cup (250 mL) frozen whole kernel corn
  • 1 jalapeno pepper, chopped
  • 2 tsp. (10 mL) chili powder
  • 1 tsp. (5 mL) garlic powder
  • 1 cup (250 g) fat-free sour cream
  • 1/2 cup (125 g) shredded low fat cheddar cheese
  • 4 whole wheat dinner rolls

Preparation

Step 1

Melt 2 Tbsp. (30mL) margarine in large nonstick skillet over medium-high heat and cook onion and green pepper, stirring occasionally, until tender; about 5 minutes. Add remaining 2 Tbsp. (30mL) margarine and cook ground turkey, stirring occasionally, until done; about 5 minutes.

Step 2

Stir in beans, tomatoes, corn, jalapeno pepper, chili powder and garlic powder. Reduce heat to low and simmer covered, stirring occasionally, until heated through, about 30 minutes.

Step 3

Top with cheese and sour cream. Serve with dinner rolls.
