Ingredients
- Eggs - 5
- Cream - 500mL
- Yogurt - 500mL
- Gelatin - 6 sheets
- Sugar - 250mL
- Nutmeg - 1Tbsp
- Allspice - 1Tbsp
- Cinnamon- 1Tbsp
Preparation
- In a heavy bottom pot add the cream and sugar, bring it up to temp and stir until the sugar is melted. Remove from heat
- Add the bloomed gelatin and mix until all the gelatin is dissolved
- Mix in all the dried spices and taste. If the mix is to your liking poor it into the serving container and place in the fridge to set up
- The Parfaits will be ready to serve after a couple of hours, if possible refrigerate overnight
Sticky Toffee Pudding Brownies

Brown Sugar 113g

Whole Eggs 2
A/P Flour 396g
Baking Powder 1 ½ t
Chocolate, Dark 75g
Butter 454g
35% Cream 500ml
Brown Sugar 793g
For Pudding:
1. Combine Dates, Baking Soda and Hot Water. Allow Dates to become soft about 30 minutes and blend.
2. Combine Butter, Brown Sugar and Vanilla add the Eggs one at a time to the date mix
3. In a separate bowl combine Flour, Baking Powder and Coco.
4. Add Date Mixture to the Sugar/Egg mixture then fold the dry ingredients into the wet.
5. Butter serving vessel and fill three quarters with batter bake at 325F about 25 minutes until cake is set.
6. Remove from oven and top with caramel sauce and allow to permeate cake while cooling.
For Caramel Sauce:
1. Combine Brown Sugar, Butter, and Cream Bring to boil and simmer for 20 minutes.
To serve: Top the brownie with caramel and bake until warm. When plating top with warm sauce.
Gingerbread Pancakes

Milk 3/4cup
Egg 1
Butter Melted 2Tbsp
Molasses 2Tbsp
Brown Sugar 2Tbsp
Vinegar 2Tbsp
AP Flour 1Cup
Baking Soda 1/2tsp
Baking Powder 1tsp
Kosher Salt 1/2tsp
Ground Ginger 1tsp
Ground Cinnamon 1tsp
Nutmeg 1tsp
1. In a large mixing bowl combine all of the wet ingredients and mix thoroughly.
2. In a separate mixing bowl combine all of the dry ingredients, mix well.
3. Combine the two bowl using a whisk.
4. Pre heat a nonstick medium sized skillet. Check the heat by dropping a small portion of batter onto the pan.
5. Once the heat is just right, add the desired amount of batter to the pan. Let the pancake cook until little bubbles start to appear around the edges.
6. Flip the pancakes and check after 2-3minutes.
7. Remove from the pan and enjoy!!!
