Dip # 1

Remoulade Sauce/ Classic French style sauce great with chips, topped with caviar.

  • 1.5 cups Mayonaise
  • .5 cup crème fraiche or sour cream
  • 2Tb chopped shallots
  • 2 Tb chopped capers
  • 2 Tb chopped sour gherkins
  • 10 chives sliced
  • 10 sprigs of chervil chopped
  • 4 sprigs tarragon chopped
  • 1.5 tsp Dijon
  • 1.5 tsp Cider Vinegar
  • .5 tsp anchovy paste
  • Salt and pepper o taste
  • Mix all ingredients, store in the fridge for up to one week.

Dip #2

Fire Roasted Jalepeno Cheddar dip

  • 6 - 8 roasted jalepeno, peeled an and seeded and chopped.
  • 4 oz cream cheese (room temp)
  • .5 cup of mayonnaise
  • ½ t salt
  • ¼ t sugar
  • 1/8 t cayenne pepper
  • 1/8 t black pepper ground
  • 1/8 t smoked paprika
  • ¼ c English pickled onions (haywards) chopped
  • 3 thinly sliced green onions.
  • .5 lb sharp white cheddar cheese grated
  • In a mixer with a paddle attachment, beat the cream cheese on medium speed until light and fluffy (about 3 minutes).
  • Add the Mayonnaise and cheddar and all other ingredients and mix on low speed until they are fully incorporated.
  • Store in the fridge for up to one week.

Dip #3

The C.P.H Based on my Dads favorite snandwich.

  • 1.5 cup Mayonaise
  • .5 cup ketchup
  • ¼ cup sour cream
  • 2 tsp Worcestershire sauce
  • 2 tsp Brandy
  • Salt and a good amount of black pepper
  • .5 cup of homemade crispy bacon bits
  • 2T chopped chives
  • You will need 1.25 cups of uncooked bacon to yield the .5 cup for this recipe.
  • Chop the bacon as fine as you can or better yet grind it through a meat grinder.
  • Render the bacon in a hot pan until browned and crisp. Strain it. Reserve the bits for the dip and you can use the fat for something else like to roast the most delicious potatoes.
  • Now mix all the other ingredients and fold in the bacon bits.
  • Keep for one week in the fridge.
