Shrimp Marinade:

  • 3 tbsp guava preserve or purée
  • 1 tsp tomato paste
  • Zest & juice of 1 lime
  • 1/3 cup olive oil
  • 1 clove grated garlic
  • 1 tbsp cane sugar
  • 1 tsp finely chopped scotch bonnet (no seeds)
  • 2 tsp fresh dill
  • 1tsp salt
  • 1 tsp smoked paprika

 

  1. Add Shrimp to half of the marinade.
  2. Reserve rest if marinade for grilling.
  3. Soak wooden Skewers for at least half hour.
  4. Place marinated shrimp on skewers -Grill on each side (brushing with reserved marinade) for approximately a minute on each side or until shrimp turns pink and opaque.

Marinade for Salad:

  • White Balsamic & Lime Vinaigrette
  • 2 tbsp white balsamic
  • 2 tbsp lime juice
  • 2 tsp honey
  • 1 clove of garlic
  • 1 tsp Dijon mustard
  • 1/2c olive oil

Vegetables:

  • Grilled zucchini
  • Grilled Asparagus
  • Cucumber
  • Radishes
  • Dill
  • Organic greens
  • Heirloom cherry tomatoes
  • Seasonal fruit
  • Avocado
  • Toss all vegetables in vinaigrette to coat evenly.
