Red Velvet Cake

Ingredients:

  • 2 large eggs, room temperature
  • 1 cup buttermilk, room temperature
  • 1 cup vegetable oil
  • 2 tablespoons cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cup sugar
  • 2 1/2 cup all-purpose flour
  • 2 tablespoon red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract

Method:

  • Preheat oven to 350 degrees. Grease and flour a 12-cupcake pan.
  • In a medium bowl combine flour, sugar, baking soda, salt and cocoa powder.
  • In the bowl of a stand mixer combine on medium low, the oil, buttermilk, eggs, food colouring, vinegar and vanilla. Slowly add the dry ingredients to the wet ingredients and mix until smooth and well combined.
  • Divide evenly amongst the cupcake pan and bake in the oven for approximately 22-25 minutes. Make sure to do a toothpick test at 12 minutes and 15 minutes to gage doneness, as oven temperatures may vary. Remove from oven and allow to cool.

Cream Cheese Frosting

Ingredients:

  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar
  • Chopped pecans and fresh raspberries or strawberries, for garnish

Method:

  • In a large mixing bowl beat the cream cheese, butter and vanilla together at a medium speed until smooth. Make sure to use room temperature butter and cream cheese to ensure smoothness.
  • On low speed add the sugar until incorporated. Turn up the mixer to high and beat until light and fluffy.
  • Spread generously over the cooled cupcakes.
