Maple Herb (cure) Marinated Tuna

  • 1 Albacore Tuna loin (ready to use, fresh)
  • 400g kosher salt
  • 200g maple sugar
  • 3 each citrus (lemon, lime and orange zest only)
  • 1 tbsp maple syrup
  • 20g peppercorns
  • 15g coriander seeds, crushed
  • 10g juniper berries
  • 1bunch fresh coriander (chopped rough, wash & use the roots as well)
  • You may also add dill, chervil or tarragon depending on what you have available from the garden.
  • 6 star anise, crushed

Mix all ingredients together and cover the fish for 30 minutes in the fridge. Remove the cure and rinse the fish. Pat dry. When ready to serve, bring the tuna to room temperature. Torch the tuna on all sides until caramelized. Serve with roasted squash, cranberry relish, crème fraîche and crispy kale.
